
Ingredients:
150g of gingko nuts – Deshelled
2 Yams – sliced
4 Pandan leaves
200g of pumpkin – diced
1 cup of fresh coconut juice
A pinch of salt
Shallots – finely sliced
2 tablespoons of oil
2 tablespoons of sugar
Methods:
1. Boil the gingko nuts in sugary water till the water is reduced to a syrup consistency. Refrigerate overnight.
2. Steam the sliced yam and pandan leaves for 20 mins.
3. Add in the pumpkins and steam for another 10 mins.
4. Add in a pinch of salt to the coconut juice and steam the mixture lightly.
5. Add oil to a heated pan, add in the shallots to fry.

6. Once the yam is steamed, add in 2 tablespoons of sugar
7. Use a blender and blend the yam till a smooth consistency is reached. Add some water to ensure that the yam is blended well.

8. Scoop out a serving of blended yam into a dessert bowl. Add steamed pumpkins, gingko nuts and coconut milk. Drizzle some onion oil on top.

9. Serve warm.
